ingredients:
1 lb. prawns 2 oz vegetable oil 1 t. ginger 1 t. sugar 1 t. rive wine 1 t. salt 1 t. spring onion (chopped)

DIRECTIONS:
- Remove the heads and legs from the prawns. Wash and cut each into 3 sections.
- Heat oil and add prawn heads and ginger. When the oil becomes red, add the prawn sections to stir-fry for one minute. Add sugar, salt and rice wine. Lower the heat to simmer for about 5 minutes.
- Place the prawn heads and sections on a plate and heat the remaining oil and add the spring onions. Pour it on the prawns. Serve and enjoy!
